VINIFICATION: 7-day maceration, grapes pressed using a pneumatic press, fermentation and biological deacidification, ageing on fine lees in used barrique barrels for 5 months
MATURATION: 4 months in 400 l in barrique barrels

BOTTLING: during the waning crescent moon phase, 0.75 l bottles
