HARVEST: when technological maturity is reached, only perfectly healthy and carefully selected grapes are hand-picked in the morning.
VINIFICATION: short maceration, grapes are pressed using a pneumatic press, fermentation, cooling and biological deacidification, ageing on fine lees in used barrique barrels for 5 months
MATURATION: 4 months in stainless steel vats
ALCOHOL CONTENT: 12.5 vol. %
TOTAL ACIDITY: 5.4 g/l
BOTTLING: during the waning crescent moon phase, 0.75l bottles
SERVING TEMEPRATURE: 10-12 ⁰C
